Ingredients

Instructions

  1. Rinse the fillets so they do not taste bitter.

  2. Brine: 2 tablespoons vinegar (12%), 2 tablespoons cooking oil, ¾ dl sugar, 1 dl chopped tomatoes ½ tsp crushed allspice ½ tsp crushed black pepper 1 tbsp dill

  3. Stir the sugar well before adding the herring. Add the herring and onion, mix well and put it in the fridge so the flavours can settle.

Notes

Tips: Marinate the herring for at least 2 to 3 days in the fridge for the flavours to develop, and up to 1 week for the deepest flavour.

Storage: Keeps in the fridge in a sealed jar for up to 1 week.

Variations: Add thin slices of red onion and fresh dill for a fresher version. A pinch of sugar in the marinade balances the acidity of the tomatoes.
