Vermentino — Tuna pasta with tomato and herbs pairs beautifully with a fresh Vermentino from Sardinia or Tuscany — fruity acidity and a light bitter note that perfectly complements the tuna. Pinot Grigio or a dry Provence Rosé are equally fine.

Ingredients
 
 

  • 80 g tuna in oil
  • 140 g pasta
  • 2 tbsp olive oil
  • 2 cloves garlic crushed
  • 1 tsp lemon juice
  • 1 tbsp parsley finely chopped
  • salt and pepper to taste

Method
 

  1. Put on water for pasta.
  2. When you put the pasta in the water, you can prepare garlic, parsley, tuna and lemon.
  3. When the pasta is almost ready, put on a plate with a frying pan or saucepan that has room for the pasta and put in the oil.
  4. When the oil is hot. add garlic and let it cook for approx. 30 seconds. Then stir in the tuna. lemon juice and parsley. Add a few tablespoons of pasta water.
  5. Let it get hot and add pasta.
  6. Serve with lemon zest. (Parmesan is not served with fish, but if you like it, GO for it!)

Yes, fresh tuna gives an even better result. Sear the steak in a very hot pan for 2–3 minutes per side until just pink inside, then flake it into the sauce at the end. Canned tuna in olive oil remains the most convenient and flavorful everyday option.

What can I add to tuna pasta for more flavor?

Capers, black olives, cherry tomatoes and red chili are classic additions. A small knob of butter stirred into the sauce at the end adds richness and gloss. Fresh parsley or basil on top finishes the dish perfectly.
